1 lb. Black Beans
Salt Pork
2 T. Oil
1 Onion
2 Bay Leaves
1 T. Black Pepper
1 T. Thyme
2 T. Oregano
1/4 C. Cumin Powder
1 t. Epazote (wormseed)
2 T. Garlic Powder
Soak beans overnight, rinse. Saute onions and salt pork in oil. Add seasonings and water and simmer for 15 minutes. Add beans, cover with water and cook until done.
To re-fry:
Spoon out cooked beans into skillet lightly soaked with oil. Cook on medium heat, stirring and mashing beans until cooked into a paste.
